There’s a whole lotta smokin’ going on out here in Irving. Even the sides—corn, beets, brussels sprouts salad—are smoked (the corn was fine, but the salad was too al dente). A platter of three meats with three sauces is a choice for macho appetites: beef brisket injected with bacon stock and spicy sauce, beef-and-pork sausage with honey-bourbon sauce, and pulled pork with a tart Carolina-style sauce. Call us heretics, but the beef brisket Frito pie with roasted peppers and smoked cheddar was just as satisfying. (6/13)
