Please share ur recipes.
Vegetarian Meatloaf
1 cup dried lentils
1/4 cup wheat germ
1 cup bread crumbs
1/2 cup brown rice (already cooked)
1 minced onion
3 cloves minced garlic
3 eggs
1 tsp. each oregano & thyme
1 Tbsp. soy sauce
1/4 cup ketchup
1 tbsp. olive oil
1/2 tsp. Tabasco sauce
salt & pepper to taste
Cook lentils (60-90 minutes in water), then drain and mash. Mix all ingredients together and put it all in a greased 9x5 loaf pan. Cover and bake at 350F. for 30-40 minutes. I put a pan of chunky sweet potatoes, onions and garlic in olive oil in the oven at the same time

Vegetarian Pizzas
1. Rinse, drain and thinly slice a canned, water-packed artichokes. Place them on pizza dough and cover with grated Gruyere cheese, thinly sliced garlic, a drizzle of olive oil and panko breadcrumbs.
2. Remove stems from large portobello mushrooms. Cook the mushrooms in a mix of olive oil, garlic and red wine vinegar until tender. Then fill with sliced plum tomatoes, mozzarella cheese, and homemade or store-bought pesto and bake until cheese has melted. These can be enjoyed atop a crust - or even on their own.
3. Top dough with a cooked tomato sauce, strips of sautéed eggplant and ricotta salata. Once baked, scatter fresh basil leaves over the top for Pizza al la Norma
4. Grill slices of zucchini and yellow squash and place on pizza dough along with grilled onion, Parmesan and fresh oregano.

Vegetable Quiche
1 lb. asparagus fresh or broccoli or cauliflower
trimmed n cut into 1/2 inch pieces
10 slices bacon
2) 8” pie shells unbaked
1 egg white lightly beaten
2 c. Swiss cheese shredded
4 eggs
1 1/2 c. half n half cream
1/4 tsp. ground nutmeg
Salt n pepper to taste
Preheat oven 400° F. Place vegetables in a steamer over 1” of boiling water - cover. Cook until tender but still firm – about 2 to 6 min. Drain -cool.
Cook bacon - medium high heat until evenly brown. Drain- crumble n set aside.
Brush pie shells with beaten egg white. Sprinkle crumbled bacon -chopped vegetables into pie shell.
Beat together eggs- cream- nutmeg- salt n pepper. Sprinkle Swiss cheese over bacon n asparagus. Pour egg mixture on top of cheese.
Bake uncovered in preheated oven until firm- 35 to 40 min. Let cool to room temperature before serving.Notes
