The famous sourdough bread accompanied by cloudlike chicken liver pâté is hard to resist, but leave room for the pear couscous carbonara with a soft-poached egg and truffle vinaigrette. Or perhaps the crisped foie gras with foie gras flan and wild mushroom ragout might be more to your liking. Falling-off-the-bone braised lamb shank was draped across a comfy nest of soft polenta.
