Lisa Garza, of Next Food Network Star fame, has set her sights on the South. Purple hull pea cakes are offset with a smashing lemon aioli and an elegant arugula salad. Her fried chicken, buttermilk soaked and pressure fried, is about as good as it gets, particularly paired with a confit of collard greens. A traditional Alabama Lane cake, suffused with bourbon and raisins, was made only more delicious by its meringue buttercream icing. As for the ambience, think Spode china and congenial waiters in bow ties. (5/12)
