Some haute favorites from posh top-floor Shearn’s have migrated downstairs to the resort’s informal cafe, among them the shrimp de Jonghe and the toothsome spinach salad with egg, bacon, and Parmesan. Equally generous is the grilled chicken salad, its crisp greens tossed with tender baby artichokes, hearts of palm, and kalamata olives. Potted palms, sunshine-hued walls, and tall windows looking out on the Moody Gardens glass pyramids make us feel transported to some more exotic island. (11/12)
