Silo House Housed in a farm-turned-creative-complex, its grounds populated with sculptures and art galleries, Salt is the brainchild of chef Jay Lummus, whose weekly prix fixe menus offer thoughtful pairings like sourdough crostini topped with ricotta, prosciutto, and caramelized onion, and a seared sea scallop with a champagne vinegar agrodolce. Entrées include the likes of beef tenderloin rubbed with smoked sea salt or seared rainbow trout, each paired with sides that can include potato gnocchi and Parmesan whipped potatoes. For dessert: chocolate cake bread pudding, the only menu staple, with salted caramel ice cream and berry coulis. Reservations recommended. (6/12)
