Lockhart Smokehouse

The words “shoulder clod” on a menu might be less than appealing, but it’s a popular barbecue cut here in Texas, and for good reason: it’s economical, leaner than brisket, and sports a seriously beefy flavor and an excellent crust. All that to say, the clod here—“our favorite cut!” proclaims the menu—is excellent, both lean as advertised and deliciously smoky. On the other hand, next time we’ll pass on the coleslaw, fiery and inexplicably orange, and the s’mores bread pudding, which was tasty but not as packed full of the good stuff as we’d hoped.
