Attention, Fort Worth: The old Pedro’s Trailer Park location at 2731 White Settlement Road is getting an extreme makeover. Chefs/restaurateurs Grady Spears (Dutch’s, Fort Worth) and Lou Lambert (Lamberts Downtown Barbecue, Austin, pictured) have thrown in together and will open a modern Texas steakhouse there in a couple of months. Look for Lambert’s to have Texas cedar, leather, stucco, and tin, but with an updated feel. As for the food, Grady says: “Lou’s a little country and I’m a little rock and roll.” The two will have a wood-burning grill and a smoker, but they won’t be doing brisket and the usual pork ribs. Instead look for smoked beef short ribs, cabrito, game, and the occasional fish. And steaks. The planned opening is mid-March. Oh, the slogan is “steaks, seafood, & whiskey.”
