Justin Girouard recently returned home to Lafayette, La. after spending almost a decade as a chef in New Orleans. His restaurant, The French Press is located in downtown Lafayette—the heart of Cajun country. Chef Girouard puts his own distinctive spin on classic dishes, such as his Cajun Benedict, which uses French bread instead of English muffins, boudin instead of Canadian bacon, and is topped with chicken and andouille gumbo instead of hollandaise.
