Southern Biscuit Muffins
Recipe from Castle Hill Cafe, Austin
10 cups flour
1 cup sugar
6 tablespoons baking powder
1 teaspoon salt
1 1/4 pound margarine cubed
4 cups cold milk
These are bite-size muffins; use a small-muffin pan. Preheat oven to 350 degrees.
In a bowl combine the flour, sugar, baking powder, and salt. Mix well. Work the margarine in by hand until the mixture resembles coarse cornmeal, making sure there are no lumps.
Gradually add the cold milk and stir until just mixed. Do no over beat.
Place in oven and bake at 350 degrees for 7 minutes. This recipe makes a big batch of muffins.
