When Houston caterer Joe Abuso hears the word “chops” these days, his first thought is “lamb.” But fifteen years ago, the former professional string bass player was honing his musical chops playing with singer Tom Jones, the Joffrey Ballet, and the Houston Symphony. In 1988 Abuso changed careers, but he still does charity gigs with the Barbed Wires, a quartet of musical chefs consisting of Houston’s Robert Del Grande (guitar) and Tim Keating (vocals) and Dallas’ Dean Fearing (mandolin). The band cooks and, by the way, so does Abuso, whose rosemary-marinated pork loin on truffle-scented white beans is the best pork and beans you’ll ever eat.
