Austin’s PBS affiliate, KLRU, partnered with Aaron Franklin of Franklin BBQ to launch an educational web series. Watch the first episode (above) in which Franklin shows us how to select, trim and season a brisket.

He refers to his “very secret rub” at the beginning of the video, but of course, it’s nothing but salt and pepper.

The show’s production was funded by an IndieGoGo campaign, which as of this writing had topped its $15,000 goal with $17,787, and will continue fundraising until midnight. Incentives to donate include a piece of smoker-ready wood with your name on it ($10), a koozie and a “Brisket Is My Spirit Animal” bumper sticker ($25) and a five-minute phone call with Franklin for personal smoking advice ($250).

There’s also a November 7 “Meat and Greet” party at KLRU for donors of $150 and up.
