Chef Charlotte’s Queso Fundido

4 oz. asadero cheese shredded
4 oz. Manchego cheese, shredded
2 1/2 oz. Palacios Chorizo, diced
1/4 cup jalapeños, diced
1/4 cup onions, small diced
1/4 cup tomatoes, seeded and small diced
- Preheat oven to 425°F.
- Coat an oven-safe or cast iron container with non-stick spray.
- Mix cheeses together and place in prepared pan. Top with chorizo then bake until cheese is melted and bubbly.
- Carefully remove from oven and top with jalapeños, onions, and tomatoes. Serve with your favorite chips or tortillas.
