Chef Charlotte’s Queso Fundido

4 oz. asadero cheese shredded

4 oz. Manchego cheese, shredded

2 1/2 oz. Palacios Chorizo, diced

1/4 cup jalapeños, diced

1/4 cup onions, small diced

1/4 cup tomatoes, seeded and small diced


  1. Preheat oven to 425°F.
  2. Coat an oven-safe or cast iron container with non-stick spray.
  3. Mix cheeses together and place in prepared pan. Top with chorizo then bake until cheese is melted and bubbly.
  4. Carefully remove from oven and top with jalapeños, onions, and tomatoes. Serve with your favorite chips or tortillas.
