Café Mayapán’s mission is to act as a food-employment training center, focusing on traditional Mexican cuisine. Order this to go: Takeout service includes made-to-order red enchiladas, potato flautas, soups, and desserts. The unconventional chile con queso has a chicken broth base, with strips of green chile, onion, tomato, and garlic and chunks of white cheese melted to perfection. House-made tortillas or tostadas serve as your utensils. The Ensalada Mayapán is a roasted green chile stuffed with chicken or beef salpicón. To quell the heat of the green chiles (they can be hot!), slurp down an agua fresca. Pro tip: Jump-start your weekend with an order of menudo or posole.
