Part of La Mujer Obrera, Café Mayapán is a nonprofit kitchen (and employment training center) that serves Mexican food made with locally grown ingredients in a style that adheres to traditional cooking methods. Try the Ensalada Mayapán, a roasted green chile filled with shredded chicken salpicón, or the nopal asada relleno de queso: grilled cactus filled with asadero cheese and mushrooms. The calabacitas are delicious, the fresh squash grown in El Paso and baked with cheese and green chiles.
