Bryan has no shortage of Mexican restaurants, but when Don Chente opened in early 2021 (adding a second location later in the year), it set itself apart with its birria tacos. We ordered them during a recent visit and immediately understood the local buzz. Deliciously greasy, the tortilla is filled with tender braised cabrito and cheese, then grilled crisp and served with a consommé for dipping. We also dined on juicy bacon-wrapped shrimp served with the traditional beans and rice. Taco fillings here range from your standard breakfast items to a wide range of meats. Ceviche and oysters are included on its long list of seafood options.
