Tradition is just the starting point for excellent updated Spanish dishes such as a golden and red beet salad with super-smoky dabs of eggplant puree; classic pan con tomate amped up with piled of crushed tomatoes on rustic toast; and superlative fried rabbit. A seafood paella (on Tuesdays) was fine, with perfectly cooked shrimp, sweet mussels, and a mild rouille. At dessert, we wished for slightly crisper churros with chocolate sauce. Service-wise, the kitchen needs to speed things up.
