A staple of Lubbock’s downtown farmers market and First Friday Art Trail, this mobile kitchen elevates food truck fare wherever it roams. The menu is perennially new, offering fresh, seasonal dishes made with ingredients sourced from local farmers. The standout of our visit was the corn-breaded fried chicken, an extra-crispy twist on the classic comfort food served atop creamy cheese grits and smothered in savory-tart tomato brown butter with fava greens. Brisket tacos, a food-truck staple, were almost as good with fall-apart-tender beef, deeply flavored with tomato and garlic and complemented with queso fresco and chile de arbol salsa atop lightly crisped tortillas.
