Opened in 2020, Flamingo’s is fast becoming the hottest restaurant on Amarillo Boulevard. The kitchen’s takes on traditional enchiladas, tacos, and chiles rellenos are among the best in town, but the Central American and Caribbean dishes really shine. Mofongo, a comforting Puerto Rican dish made of mashed green plantains, reminds us of Thanksgiving stuffing; we love it paired with a better-than-mom’s fried chicken breast. Brazilian moqueca is a spicy, marvelous coconut fish stew served with jasmine rice. And the birria tacos (add the grilled cheese) may be the best tacos we have ever eaten. The stars of the Mexican menu are the shrimp-stuffed poblano, with enough spice to satisfy, and the tummy-filling pozole made fresh every day.
