The fare at Fuji is so beautiful it could rival the most lovely creations in a museum. With a wealth of delicious options to choose from, we set out on our adventure with appetizers from the sushi bar: takosunomono (tender steamed octopus with a tangy ponzu sauce) and the Truffle White Tuna (seared albacore with a yuzu truffle oil). We moved on to rolls, choosing an East versus West theme (more specifically, Japan versus New Orleans). The Geisha, a pink soybean wrapper filled with shrimp tempura and spicy crab and topped with tuna and avocado, was great but could not beat the Western, a delectable combination of spicy crawfish and fried oysters, with avocado, cucumber, wasabi mayo, and eel sauce.
