The success of food trucks in College Station has inspired several restaurateurs to expand their offerings to brick-and-mortar establishments. Tucked away in the back of an out-of-the-way strip center, unassuming Fusion Peru could easily go unnoticed by passersby. But those in the know come here to feast on some of the tastiest cuisine the area has to offer. During a recent visit, we tried the hearty tacu tacu, whose tantalizing flavors were found not only in the tender beef tenderloin but in the smoke-infused rice and beans. We found the traditional aji de gallina equally pleasing, with its array of Peruvian spices infusing the shredded chicken and thick, creamy sauce. A side order of fried plantains is a must.
