With new chef Tim Reading in place, there is no shortage of flavor at Underbelly Hospitality’s sophisticated tavern on the first floor of Market Square Tower. For the uninitiated, chef Reading ran the kitchen at Ixim, in Bravery Chef Hall, and his fried lamb-and-pork meatballs earned a place in Texas Monthly’s 2022 list of best dishes. We started well with the Bread and Cheese: crostini draped with fresh sliced peaches, mozzarella, and a spiced peach–pecan compote. If you truly love garlic, choose the perfectly seared tuna loin atop an intense pesto with cured cucumber or the sliced bavette steak anointed with chimichurri alongside a spicy charred-corn salad. But know that the most popular dish here is the epic Tavern Burger: a toasted potato roll stacked high with 44 Farms beef, Swiss cheese, horseradish sauce, sautéed mushrooms, and fried shoestring onions. Prepare for loud music, as the upbeat tunes rock late into the night!
