Bright, clean, and green, it’s a heavenly combination of coriander, garlic, chiles, and tender chunks of fresh paneer. Or the saag aloo, potatoes rolled into a mix of creamed spinach and mustard greens. Or the tender, char-grilled Steak Tikka Bourdain, named for the late chef and TV personality, whose visit helped introduce Himalaya to a wider world.
