Indigo is unique: a set, multicourse menu served in a modest space in a scruffy part of north Houston, each dish arriving with historical explanations and personal notes. Partnering with his wife, Chana, Jonny Rhodes, who previously cooked at Oxheart and Caracol, has created this cultural and culinary experience of refined soul food. The menu is prix fixe—choose between Herbivore, Carnivore, and Omnivore—and the plates are small, complex, and fascinating. A menu might involve collard greens braised in slabber sauce with vegetable “ham,” autumn squash with benne seed sauce, red snapper cooked over pecan, aged smoked pastrami with sorghum-stewed beets, and much more.
