Soon after retiring, Juan Gonzalez Jr. got bored of fishing on the Texas coast and decided to pursue his passion: great barbecue. He made his way to McAllen and opened Jethro’s, where his wife, son, and daughter work with him behind the counter and his son-in-law tends the pit. He is clearly a perfectionist, from his precisely trimmed beard to his meticulously sliced prime briskets with a salty crust and fat rendered to jelly. His beef rib is spot-on, but you’d better be early (and hungry) for it. His shredded pulled pork is silky, with a proper balance of pepper and oak smoke. Don’t miss the Akaushi beef sausage.
