Jett’s is Old Marfa. Located in the elegant Hotel Paisano, the dining room is decorated with photos of James Dean and Elizabeth Taylor from the 1956 movie Giant, which was filmed down the road (Dean’s character was named Jett Rink). In the dining room you’ll often find the town’s old guard, locals who’ve been in the area their whole lives, sipping red wine or enjoying one of the bar’s substantial martinis. The food is heavy on beef choices—ribeye, beef shank, the “Giant” burger. Our go-to is the fried sirloin streak with a pistachio crust and gravy (green beans on the side), which is large enough to split. The salads are pretty good too, especially the roasted poblano with corn and pecans.  And of course there is seafood, which we’ve enjoyed in the past. If you go in the evening, budget some extra time—much of the staff is young and inexperienced and you might be waiting for a while. But Jett’s is a pleasant enough place to place to hang out, not fancy but nice, with pale green walls and white tablecloths. The patio is also an agreeable spot for a pre-prandial drink.
