Or take your crepes refreshingly stuffed with fresh mango. Chilaquiles toluqeños, a tip of the cap to Toluca, are bright with the vinegary bite of fresh chorizo and sided with black beans. As part of God’s preferred plan, mimosas appear and seem to magically refill with welcome regularity. Kudos to the café de olla, the awesome Mexican cinnamon–spiked coffee that harks back to more-genteel times in Mexico.
