A restaurant focused on the Mexican breakfast standard of chilaquiles must boast a practiced hand, as proper preparation eludes most. We’ll dive into the chilaquiles toluqueños, buoyed in salsa verde and the house vinegary chorizo. Chilaquiles enfrijolados combine refried beans with queso cotija and two perfectly cooked eggs. You say mole and we say olé, and the chilaquiles en mole is a study in richness, with its dusting of cotija and rich mahogany sauce. Not sure you’re a compadre of the chilaquile?
