You will likely see folks in uniform queued up in the cafeteria line when you stop at Mingo’s; working people like the speed and appreciate the variety and number of fillings for the burritos, not to mention the low prices. Completely devoid of ambience, the place is nevertheless clean, bright, and capacious. Flour tortillas are fresh and tasty, and once you have selected your filling, the counter servers are careful to drain out the excess liquid that makes for a soggy tortilla. If you have trouble choosing among all the choices, you can combine them. The soupy chicharrones looked interesting, but we went for pico de gallo and chicken—then forgot to add frijoles. Darn.
