Chef Jess Castellon has fused his dual passions for Japanese noodle soup and heavy metal and created a food truck named Motoramen. The pounding music makes the venue easy to find, and a few minutes’ observation validates how serious Castellon is about every detail. He painstakingly prepares each bowl from scratch with lovingly tended stock and all the requisite ingredients. We especially enjoyed the spicy pork tonkotsu, based on the genre’s heartiest pork broth, sided by a fried pork gyoza (potsticker). Save room for the over-the-top Fruity Pebble cheesecake because, why not?
