Chef Regino Rojas’s peerless tacos straddle the Mexican pueblo and his imagination. His popular Revolver pivoted to takeout only (and birthed La Resistencia for a seated dining experience that features a six-course gourmet taco tasting and a Sunday seafood brunch). Order this to go: Nailing old-school excellence are the tacos made with grilled Wagyu carne asada, birria (braised cabrito), and carnitas; the carnitas also come as a shareable combo meal. The tender pulpo taco with fried leeks and jalapeño salsa is exquisite. Pro tip: On weekends, Revolver adds chicken mole, chilaquiles, and menudo to the menu.
