My Mother’s Gumbo is comforting and complex; the rich, dark roux boasts shrimp, chicken, crab, okra, and Zummo’s sausage, from Beaumont. Derry’s signature Duck-Fat Fried Chicken is juicy and tender (thanks to brining) with a flavorful, crispy crust. For an excellent meatless entrée, get the Grilled Hen of the Woods Mushrooms; meaty with a touch of tang, the chargrilled mushrooms are served on a puddle of velvety creamed corn studded with whole kernels. Crawfish Boil Ravioli features tender, ricotta-stuffed pasta pillows, crawfish tails, and sausage in a broth deftly seasoned with seafood boil spices. Besides dramatic craft cocktails, there are some excellent zero-proof drinks.
