Stroll around San Antonio’s inviting Pearl retail development, visiting cool little boutiques and ogling the Hotel Emma’s vast lobby. Then have a bite at Savor, the student-staffed restaurant from the Culinary Institute of America (its local campus is here). The dinner menu changes with each semester, showcasing the talent of a whole new group of young people and older career changers. Mediterranean dishes (devised by the CIA’s faculty chefs) are a staple, one nice example being tagliatelle tricked out with crispy pancetta and crème fraîche. But the teachers strive for diversity too, with dishes like a pan-seared Gulf red snapper with spicy Thai red curry. The setting is compact, well designed, and vaguely Scandinavian-looking, and the prices are more than reasonable.
