Stephan Pyles’s Texas-proud Stampede 66 is back in business in Allen’s new Watters Creek Convention Center. The restaurant’s cowboy vibe feels more modern than rustic, and the smaller menu delivers on the “bigger than Texas” theme that characterized the Uptown location, with dishes like chicken-fried buffalo steak and a bone-in ribeye with red-chile onion rings. The brisket with three-potato salad made us true believers: the meat was juicy and tender and came with a little flask of gravy, house-made sweet pickles, and the aforementioned potato salad, enlivened with the Southwest kick we remember. The wine list is extensive and the cocktails creative, like the Luckenbach Lemonade (vodka, bourbon, lemon, mint). Desserts are hard to resist, like the butterscotch pudding with salted caramel served alongside a Long-horn-shaped snickerdoodle.
