This just in: Fort Worth chef Grady Spears (you remember Reata, right, and the Chisholm Club?) of recently opened Dutch’s at 3009 S. University Dr. is working on a new cookbook. It’s going to be called The Cowboy Way, and it’s being done with long-time collaborator and writer June Naylor.
Here’s the idea: Grady travels around the country to various cowboy sites and cooks on location with cowboy chefs and other fun food people. So far the pair has done a chuck wagon stint at the Perini Ranch Steakhouse in Buffalo Gap and a tailgate party at the Texas Stadium before a Cowboys game. Next they’re heading to Kansas City for a barbecue photo shoot. Then on to LA, Arizona, New Mexico, and the Big Island of Hawaii (wait–Hawaii?! Maybe they wrangle poi there–would you call them “poiboys”?). Look for The Cowboy Way next October–that’s 2008.
