The changing scene at this Culinary Institute of America annual pop-up bakery and breakfast spot (located inside the CIA’s regular restaurant, Savor) is always a delight. Run by different groups of students—the morning to 2 pm shift was covered during our visit by the pastry class—it provides training in both meal prep and service. Under the supervision of faculty chefs, the team we witnessed had only two days’ experience but the delicious food and smooth sailing proved their scholarship. The menu is small, and among the four of us, we tried much of it, including a very French omelet, a lovely and flavorful spinach and cheese quiche, and a bowl of pho bo with eye of round in beef broth. All were very fresh and flavorful (though pastries are not listed on the menu, there was a case of delicacies on the pass-through counter). We chatted with our server about her course work, the experience of school in San Antonio, and her plans to stay in the region to get a business degree. One warning: The pop-up runs weekdays through April 17 and then will be closed for the rest of the year, so get there fast! (It will also be closed March 29 & April 8.)
