All we want from our BBQ is good meat, flavorfully seasoned and cooked to succulent deliciousness. This rustic joint, nestled in the Hill Country, delivers the goods. Beef brisket is juicy with the right amount of drape and tasty bark. Mahogany-colored ribs have the exact amount of pull and exude perfect pork unctuousness. The grilled chicken’s skin is blackened, but the meat remains moist and not overpowered by too much smoke. House-made sausages are finer textured than most links and deliver big flavor. The jalapeño-cheddar version, blending pork and beef with chunks of cheese and fresh jalapeños, packs a tasty punch. Sides are not bit players here. Extra crispy fries come tossed with fresh garlic, Parmesan, and truffle salt and mounded with more freshly grated Parm. Mac and cheese stars big elbows napped in an ultra-creamy, multicheese sauce topped with toasted buttery breadcrumbs. And their version of street corn is authentically amazing. The menu, written on the blackboard, lists desserts such as fresh-baked cookies and cobbler, but we haven’t had room to sample them. Yet.
