The Lima-style carretillero ceviche (so named because it’s often sold from street carts) is a veritable taste sensation, featuring the citrusy-spicy marinade that gives the restaurant its name along with shrimp, tender striped bass, sweet potato, and canchita (a pico de gallo–like relish). Also satisfying is the Peruvian comfort food lomo saltado, a stir-fry of tenderloin, red onion, and tomato with chunky fried potatoes and white rice.
