Chef Leobardo Garcia open this larger, bustling location of Limon con Chile in Midland in January of 2024 following the popularity of the tiny (six tables) original operation in Odessa. Garcia relies on in house made tortillas, fresh ingredients, and spices and marinades that draw on flavors from the interior of Mexico, not just the usual Tex-Mex staples. Tinga de pollo—three large tacos filled with shredded chicken breast and onion plus cilantro, queso fresco, lettuce, and a tangy chipotle sauce—were worth the wait for a table on a busy Saturday mid-afternoon. We traded one of our trio for a taco al pastor that our friend had ordered—marinated and seasoned pork plus the usual onion and cilantro topped with traditional grilled pineapple. The desserts looked delicious, especially the choc-flan with fresh berries and vanilla sauce, but we decided to save the treat until our next visit. (By the way, the variety and prices here are outstanding.)
