There’s no shortage of Mexican cafes in Van Horn, where I-10 meets Highway 90. Which is good, because it’s a long hungry drive to the next watering hole. Travelers could do much worse than Lizy’s, just off the interstate. A row of Border Patrol cars out front lent reassurance when we visited. Despite the crowd, we were greeted immediately and settled in with chips and an aggressively fresh salsa. Breakfast is a big deal here, but we were in the mood for beef enchiladas and got one order each of the flat and rolled variety. Great combination of flavors between the red sauce, cheese, meat, beans, and rice.
