Carrot Soup

1 clove garlic
1/4 cup sliced red onion
1 1/2 pounds organic carrots cooked in enough water to cover
(save water)
1 teaspoon agave nectar
1/4 teaspoon lime juice
1/2 cup sour cream
2 1/2 cups of water
salt to taste

Combine ingredients in a blender and purée until smooth. Add salt to taste. If too thick, add a little more water.

Shrimp Pico

8 cooked shrimp, diced
1/2 small ripe tomato, diced
1 tablespoon diced yellow onion
1 tablespoon chopped cilantro
1/2 tablespoon lime juice
1 teaspoon diced serrano chile
salt to taste

Combine all ingredients and use as a garnish for soup.
