One might not expect to find an authentic Korean restaurant in Longview, but Evergreen is here and thriving, thanks to the talents of its co-owners, husband-and-wife team Seanjin Kim and Stella Park. We love adventurous food and the simple, easy-going space. We were delighted with the East-meets-West theme of the loaded fries—hand cut and crispy topped with beef bulgogi, stir-fried kimchi, green onions, and toasted sesame seeds, served with a side of the house dipping sauce. Evergreen offers six varieties of poke bowls, of which the spicy crab and the smoked salmon are both delicious choices. For dessert, we could not pass up the strawberry and cheese macarons and took some salted caramel to sustain us on the road. The lunch special, a Korean version of the Japanese bento box, is a handy design-your-own option that allows the diner to choose a protein (chicken or beef bulgogi; or grilled chicken, shrimp, pork, or tofu), a carb, rice or noodles, a side, and a soup.
