Jett’s is Old Marfa—located in the elegant Hotel Paisano, the dining room is decorated with photos of James Dean and Elizabeth Taylor from the 1956 movie Giant, which was filmed down the road (Dean’s character was named Jett Rink). In the dining room you’ll often find the town’s old guard, locals who’ve been here their whole lives, sipping red wine or the bar’s substantial martinis. The food is heavy on the beef—ribeye, beef shank, the “Giant” burger. Our go-to is the fried sirloin streak with a pistachio crust plus gravy and green beans, which is large enough to split. The salads are pretty good too, especially the roasted poblano with corn and pecans. Budget some extra time for dinner at Jett’s—much of the waitstaff is young and inexperienced, and you might be waiting for a while. But Jett’s is a nice place to place to hang out. In the warmer months you can sit on the outdoor patio, listen to live music, and dream about James Dean.
