Dark and velvety mole smothering a chicken leg quarter is a foolproof option, as is the guisado de res, a generous portion of tender beef tips in brick-red chile sauce. Our hands-down favorite remains the enchiladas verdes, corn tortillas stuffed with shredded chicken and topped with tart tomatillo sauce and grated Oaxaca cheese.
