With its flocks of butterfly art and its wild pink and coral color scheme, PostScript looks like it might have escaped from a Barbie sound stage. The menu, though, is serious, with daring yin-yang flavor combinations courtesy of consulting chef Bryan Caswell (remembered best for his mega-hit restaurant Reef). Want an example of “daring”? Well, how about “Donut with Caviar”? It comes on white-chocolate crème fraîche, crowned with spicy caviar, and is a terrific flavor bomb. The salads, too, can be brilliant, like Gulf shrimp with haricots verts, Fresno peppers, spiced pecans, and champagne vinaigrette. But it’s not all prissy at PostScript. Among heavyweight offerings from the grill are a tender smoked double-cut pork chop and a novel version of steak frites, featuring filet mignon, onion jam, and crispy fries. A beautifully seared King salmon steak arrives over crispy Brussels sprouts with orange-tinged mustard, while Gulf snapper is accompanied by sweet-and-sour Swiss chard and onion soubise. To keep the fun going, doorbells have been supplied at the luxurious booths (ensuring swift champagne ordering and delivery). A must for the grand finale: dense seven-layer dark chocolate cake drenched in ganache. PS: Be aware that there’s a dress code.
