A modern hacienda vibe inside suited our ceviche verde, which mixed firm shrimp and tender sea bass with grilled avocado and sliced serranos in a spring-green leche de tigre marinade. Dumplings enclosing juicy lamb rested in an assertive green chile sauce, topped with poblano confit and pickled onion. A pretty sushi roll combined slices of spicy tuna with rice, cucumber, asparagus, and avocado, and warm hummus studded with fried chickpeas proved a good match for braised short ribs in a truffled wine reduction.
