Kindling Texas Kitchen
Some 25 miles north of San Antonio, the bedroom community of Cibolo is hanging on to its small-town identity thanks to buildings like the charmingly updated 1911 house that contains Kindling Texas Kitchen. Under chef Efren Sandoval, who started in 2020, the sophisticated, Texas-focused menu is emphasizing locally sourced meats. Recent offerings have included fabulous braised beef neck with Parmesan risotto and very flavorful pork confit with pickled onions and tomatillo salsa. Piscivores have relished the blackened redfish filet with filé gumbo, and a medley of charred brussels sprouts, sweet potatoes, and broccoli with Caesar dressing has kept vegetarians very happy. Baker Charlaine “Charlie” Brown is responsible for the two fantastic breads on the signature Sourdough Service, a platter laden with apple-raisin jam, house-cured pastrami, and “Umami Butter.” She also gets credit for the homey, all-American desserts.
