Dallas is going crazy for hand rolls, and this small West Village restaurant is definitely on the circuit. Sitting at a U-shaped bar, we watched our rolls being made to order, sheets of crunchy, toasted nori cradling pillows of warm rice and cool strips of sashimi. We preferred the yellowtail, sea bream, toro, and salmon fillings to the far-too-subtle blue crab. Although rolls rule the menu, don’t miss the straight sea bream sashimi. Appropriately, the smart decor looks at Japanese design (sleek dark woods, basket lanterns) through a modern, West Coast lens. Note that there’s no tipping, and cash is not accepted (credit cards only).
