Elegant Supper has the feel of an Edwardian dining room, with leaded glass, brass fittings, ornate moldings and white napery. Chef Ned Elliot with chops from LA and Austin, recently took over food service here at Hotel Emma, a 19th Century brewhouse that has been impeccably restored to 5-diamond hotel status. His menu (breakfast to dinner and dessert) makes good use of the wood-fired grill with all the flavorful smoke that makes Texas cooking our own, and the regional ingredients, local honey, seasonal vegetables and ethically raised meats. We always enjoy the quail here, served smoked and crisp fried with different sides depending on the meal — but tomato jam, seasonally red or green, is always welcome. Goat cheese risotto was rich with cheese and chanterelle mushrooms, a great foil to crisp Brussels spouts and cauliflower. Elliot seems to have dismissed the dishes that spoke of the brewery’s German roots, but we forgive him since everything we tried was just lovely. Specialty cocktails and alcohol-free cocktails are concocted at a cozy bar in the front, perfect for late night indulgence.
